It's called Risotto alla Milanese. This is my grandma's recipe (for 6 ppl):

400g Arborio rice
about 20 saffron pistils
100g of Parmigiano
50g of marrow
1,5l of beef broth
10cl of white wine
1 medium onion
100g of butter

Very finely chop the onion and add in a pan with half the butter and all the bone marrow, let it cook the onion until translucent.

In a cup add the saffron and 0,5l of boiling beef broth.

Add the rice to the pan and let it toast for a couple of minutes, then pour the wine, leaving it be until the alcohol has evaporated.

Add the remaining broth a couple of ladlefuls each time, waiting for the rice to have absorbed the previous broth. Add the saffron broth last.

Take the pan off the fire and add the remaining butter and Parmigiano.
Wait a few minutes to let it rest and serve with Parmigiano on the side.
