I've just been gifted about 7 pounds of ground venison. What can I do with all of it besides make burgers?

According to your pic, there's a shitload of deer fat which your processor failed to trim before grinding because he was a lazyass wh*tetrash mouthbreather. Deer fat tastes like a gangrenous wound, so there's not much you can do to salvage it.

Same as youd use ground beef, but the cook and season should be slightly different

Make sweet breakfast sausages and freeze those links for winter.

Since we're talking about so much venison, and I am assuming you have the use of a freezer, you should probably freeze it into 14 half-pound portions. Venison can be too strong to eat a pound at a time.

You could make a shepard's pie, or stuffed vegetables without cheese.

You could also make mincemeat, and then use it to approximate the 13th century English version of the Hot Pocket.

You can make burgers obviously, but you should try filled pasta or lasagna sometime, shit's fun. Other good options are meatballs thanks to the sheer variety of flavors and styles you can make, and chili is also a good option.
