In my country, other than pigs, horses and goats, the majority of animals eaten are male. Females are too valuable for either a) making more animals, b) dairy or, if it's a bird, c) eggs.
When cows go into menopause, they become pet food. When hens stop laying they either become pet food or are sold in supermarkets as 'soup hens.'

With pigs and horses, both males and females are eaten because females aren't used for dairy. Males are still slightly more common because at least some females need to be kept alive for breeding purposes. With goats, kids are eaten more often than adult goats and both male and female are common, but males tend to be cheaper at the store because they taste muskier than females do, especially in adulthood.
