Depends on the age of the potato and the cooking method. I'm not sure there's anyone who would eat the skins of boiled potatoes which just feel like soft plastic in your mouth. I love eating the thick charred skin of potatoes that spent a bit too much time in the charcoal of a camp fire.

I always eat the skin. A thin coating of oil and a generous amount of coarse salt and pepper make that shit the best part. Plus I enjoy the earthy flavor, so I only scrub lightly to get off the gritty dirt.
