There search term is "emulsifier". I use sodium citrate for cheese sauce all the time, it's super easy and allows you to make sauce out of cheese that won't work nearly as well with a roux or milk. And it stays together at much lower temperatures too, so it works very well for dipping sauces. You also get a much purer cheese flavor than you can get with roux and/or milk-based sauces, literally just combine sodium citrate and water, heat, grate in your favorite cheese, stir and let melt together then serve, with no time needed to reduce. And of course you can replace water with beer for flavor.

Have you ever heard of a STEAK burger? Ever notice how it's still a patty, and not just a cut of steak on a burger? That's because they usually grind/make the patties out of steak, which is higher quality beef. Even then, most places won't let you order a burger cooked less than medium. If you're cooking a burger from ground beef bought at the store, you need to cook that shit to 155 (final rested temp) AT LEAST, preferably 160 aka medium-well on the way to "well done".

I think prime rib is only really good medium rare and bloody, and most steak cuts on the line between medium rare and medium. Eating below medium is always a gamble.
