in case you dont know the deckle is thick layer of fat between the superficial pectoral and deep pectoral.
the superficial pec aka point is a very well marbled piece of beef
wagyu is a breed of cow from japan that is known for being very fatty because of it's diet and living conditions and therefore is very expensive
this means this fatass in the picture paid about 250 for a 15lb piece of meat that is mostly fat

You do leave the deckle in as much as possible. You can't remove it without losing a lot of meat. Once it's cooked that part is removed easily. It keeps the meat moist and very flavorful. Trim fatcap to 1/4" beforehand
