The best thrift stores I've seen are in "upscale" suburbs of uncultured, moderate sized cities with somewhat healthy economies. Chagrin Falls, Minnetonka, Winnetka, places like that are absolutely ideal.

If you ever used the Wolf stove you posted, you'd know that an electronic control panel pops out when you press the rectangular metal thing between the hobs. You'd also know the oven hob has an LCD temperature display right on the hob itself. I just moved into my grandma's house after we put her in a home and she has a number of Zwilling J.A. Henckel knives in a Henckel block. No idea if they're even good, but they're German. Also I have some old Gerber kitchen knives from France. Have to go through a ton of her kitchen and see if there's anything else valuable in here. This house has so much stuff, it's ridiculous.

Most of the stuff in that post is totally irrelevant at least to me. It also totally leaves out all the disadvantages of gas. I will gladly trade all those listed advantages for a heat source that can bring my gallon of potatoes and water to a boil in three minutes vs. ten or twelve like gas. Gas is NOT more powerful than even a 2000W portable induction hob, unless you are using one of those jet engine wok burners, and in that case I should be allowed to use a 3500W or 5000W industrial top.
