Why is reverse searing the best way to cook a steak?
Perfect doneness every time

The only issue is the time commitment. Takes like an hour total though, plenty of time to make your side dishes

I'd rather heat my pan for 5 minutes while I pound garlic and get other stuff ready, cook for exactly 90 seconds each side, and be done.

Yeah it's a good way, but I can just throw it in a cast iron skillet and cook each side for ~3-5 minutes and get a medium rare to medium steak and go on with my life.

I crave steak because I want a big chunk of meat, not because I want a gourmet meal.

Reverse sear is superior to sous vide because it gets the surface of the steak dryer so it sears better. When it's wet the moisture has to boil off so you get a wider grey band and a worse sear
