When you consider America has been made up of tidal waves of lower class citizens from around the world it makes sense. Harveys sauce and mushroom ketchup fucking everywhere. If you have those you can make nearly any recipe in the whole damn book. Mrs. Beeton's also specifically references the "abysmal reputation of British cuisine abroad", and yet this was decades BEFORE even WWI, let alone WWII.

Well, I disagree in that it's not BAD, but it's BORING. Everything doesn't have enough spice, carbohydrates seemed to be limited to the same old root vegetables (parsnip, potato, carrots, peas etc.), and the variety is generally lacking though the quality is good. That's a terrible indicator of cheese quality and number of varieties. The idea that Dutch cheese has a prominent place in cookery is also pretty laughable. A lot of British cheese is at the moment undiscovered outside of Britain. However the artisinal cheese scene is growing here rapidly. Cornish Brie has won against French Bries in World cheese competitions. While I would agree British cheese does not yet have a place in restaurants around the world, in the UKs high class dining scene (a scene I would argue surpasses all perhaps bar America) , it certainly does. The fact of the matter is that Britain has a remarkable variety of quality cheeses and a strong cheese making culture. As a facet of a cuisine this inherently must be noteworthy, regardless of popularity in a world stage where cheese making tastes differ wildly. I mean look at cheese in America. Real cheese production was until more recent times stunted.

I would probably concede British cheeses are second to France and maybe Italy. Who else in the world can compare? I must admit that I know little about the cheeses of Germany or Holland. But I reckon from my experience of the sheer extent of British cheese making culture, and the international acclaim garnered, that we would have a fair chance. Even if we are inferior (a strange phrase to apply to such a subjective thing as cheese quality compared over hundreds of thousands of cheeses), which other cheese making nations does that leave? I cannot imagine a top 10 without the UK.

The pork capital of Britain is Lincolnshire, which produces the best British sausages and all kinds of regional pork delicacies, including chine which is a ham stuffed with huge amounts of sage. Lincolnshire also used to have its own breed of pig called the Lincolnshire curly-coat. It was a hardy breed with exceptionally fatty bacon, almost like guacinale. Unfortunately it's extinct due to it not being a commercially viable breed
