If you wanna use it up in one shot steam up a cauliflower, mash that up (stop here if lazy) then sprinkle with salt, wait for a while to let the salt draw out water (30 mins or longer if you can), drain, then heat with some whole milk or cream and mix the cheese in there

Premimum? Lol. It's among the cheaper, and the milder, blue cheeses.

Shit's delicious though. Great on a burger, especially with bacon. Makes nice mac and cheese too: it melts so well you don't even need to bother with a roux. Just melt it directly onto the mac, perhaps with a little splash of cream added. Eat it on crackers, especially with something sweet added like a drizzle of honey or (my favorite) some preserves.

It will probably be too hard and dense with that recipe. I've never tried them but there are plenty of "no churn" ice cream base recipes you could probably adapt to work. Note this blue cheese ice cream doesn't have any other sweetener besides honey. so you would need to keep that in mind when coming up with a base.
