Slow-cooked Irish stout and chicken stew always calms my nerves. But I need to make it with Guinness.

I should say: it's comfort food because it reminds me of being an adult. Cooking with care for myself. Parent unit mostly just left us with microwave garbage and only knew a couple dishes, and spaghetti of course, but none of it was any good. I actually got anemia as a kid because of that diet.

corned beef (we call it silverside in Australia) with a side of cubed potatoes, carrots and cabbage cooked in the liquid the meat was cooked in. also rissoles. I'm not sure what they're like elsewhere but in Aus there kind of like very thick burger patties. I put finely chopped onion, tomato and zucchini in mine. very nice.

My comfort food has changed; I used to down Pepsi and Tim Tams as a coping method while playing vidya when my parents would fight. Kinda took that into early adulthood. Now my comfort “food” is baking, I’ll make up some mousse or cheesecake or such and Palm it off to friends and family.

Fellow Aussie. Rissoles on the bbq remind me of Dad... occasionally I’ll bust out the bbq and get some cheap $5 IGA rissoles, sliced cheese and plain white bread to make rissoles sandwiches just to remember my childhood.
