Not true. I've grown plenty of large zucchinis in my garden, and they were all perfectly fine with a normal amount of seeds. Sometimes when the soil, temperature, and rain are just right, the plants very quickly grow large fruits.

Take a vegetable peeler and cut thin ribbons off the zucchini until you reach the seeds. Let the ribbons dry for a few hours and then saute them in butter with a little minced garlic and some lemon juice. Congratulations, you just made zucchini noodles.

Op here, I'm thinking I'll try that. Might also make some zucchini bread, and I want to try making a cold yogurt zucchini soup (basically a riff on cold cucumber soup).

Another idea I had was to salt and drain it, like you do cabbage for coleslaw, then take the juices together with some refined coconut oil and use kappa carrageenan and tapioca starch and lactic acid powder to make a kind of constructed zucchini cheese that I can shred over baked zucchini.
