given the versatility of baking supplies and the ease of finding recipes thanks to the internet. why are you still buying cake/brownie mixes and cookie dough?

I live in a high altitude area so cake mixes and premade cookie doughs are and always were fucked. I imagine it's mostly for convenience sake. Most people don't own a stand mixer and the idea of putting in effort to mix something with a wooden spoon is totally foreign to those same people.

I buy cake mixes because I CBA to measure ingredients with enough care for cake baking. Cookies, however, I make scratch as most require less precision.

Box stuff usually has a good texture but my issue is that it always has way too much sugar. I like to remove about 25% of the sugar from a dessert recipe.

Also, if you get cake/pastry flour, you can make desserts that have a texture closer to boxed things which usually use a mix of flours to achieve a similar result. Or just substitute 2 tbsp of flour with 2 tbsp corn starch for every cup of flour you use.
