Lazy dinner ideas?

I'm sitting at home on the sofa with an abundance of groceries but zero desire to cook something substantial.
Please inspire me /ck/ with your simple go-to specials.

That aside, Baked Ziti (or as close as you can approximate if your tube-shaped pasta isn't ziti). Cook pasta to the point it's still a little hard, drain, add sauce, cheese, and mix in an oven-safe casserole dish. Add a top layer of cheese, and cook for 20-30 minutes at 350F or until the top layer is that picturesque bubbly browned cheesescape. Remove from the oven, let cool and serve.

As an alternative to Ziti: a Meat Quesadilla.

-2 tortillas, up to the size of your pan
-Mexican cheese blend (either pre-shredded or you can look up that shit yourself, it's mostly colby jack)
-finely chopped or shredded cooked meat
OPTIONAL
-finely diced vegetables

Assembly instructions
1. Put the first tortilla down in the pan at medium heat
2. sprinkle with a light layer of cheese
3. apply an even layer of the meat/veg
4. sprinkle another layer of cheese
5. apply top tortilla
6. check to see that the bottom tortilla has toasted and become firm
7. Flip the quesadilla
8. check to see that the other tortilla has become toasted and firm
9. pull from heat, slice, and serve.

There are a LOT of lazy recipes that still look sophisticated when completed. Here's a cast-iron pizza recipe assuming you have store-bought fresh dough:

Ingredients:
-Half a bag of fresh pizza dough
-sauce (marinara, alfredo, olive oil, I don't care)
-mozzarella
-[GENERIC TOPPINGS]
-optional: italian cheese blend, DIY or bagged

Instructions:
-Split the dough in the bag 50/50. Put the unused half in the fridge or freezer, depending on how soon you expect to use it.
-Roll the half you plan to use into a ball, and drop in the middle of a waiting, oiled cast iron pan. Cover the top of that ball with moist paper towels, and proceed to ignore it for the next 30 minutes to two hours.
-When you return to that ball, first set your oven to 400F. Squeeze out the gas, then by hand stretch it out until it can evenly fill the bottom of the cast iron pan. Place into the bottom of that pan, then wait ten minutes.
-After ten minutes pass, apply your sauce of choice, a light layer of mozzarella (going light is important here), and then toppings if you're not doing a cheese pizza.
-Once the pizza is topped, add an equal amount of cheese, either mozzarella or a 50/50 with an Italian blend in the empty spaces. Over-covering toppings will inhibit proper cooking.
-Place the cast iron skillet over a burner at about 75% heat for three minutes.
-At the end of those three minutes, transfer the cast iron pan to the oven. Check on it in 18 minutes.
-If the cheese looks bubbly and done, remove it from the oven. If not, wait another two minutes and check again.
-Once it's out of the oven, remove the pizza from the pan and place it on a rack or platter or plate to cool. Ignore it for 10 minutes, tops.
-Cut, and serve.

also, mark bittman's recipe for pasta butter and parmesan. It has tons of variations and I make it all the time. The alfredo one is particularly nice in my opinion and is stupid simple to make. (use real parmigiano reggiano btw)

Thanks, I used to make it when I was 10 or so a lot. Just dump meat sauce in a bowl, add some Parmesan or cheddar, dip lasagna noodles in it.

It's lazy pasta, but even in highschool a lot of friends copied my idea, one friend called them lachos.

i think a grilled cheese sandwich with thin slices of grilled spam would be a fun dish. very retro, but the easy bite through the spam would match the creaminess of the cheese, unlike most other proteins, and would stand up flavorwise. bacon would be nice too but only if cooked to a total crisp.
