I put the eggs in when the water is boiling then boil for 13 minutes then drain the hot water and run cold tap water over the eggs for 5- 10 minutes.

When the eggs are done cooking ,you immediately put them in a cold water ice bath to stop the cooking process, and cause shrinkage, which makes the egg recede from the shell slightly.

This is false.

Acidity causes the membrane to cling to the shell and the egg white
Alkalinity weakens the membrane slightly.
So if anything, use a teaspoon of baking soda if you really want to.
I personally have noticed no difference either way. The best advice I can give is don't overcook them, and shock them in ice water

Never peel a hardboiled egg again! Get a microwave egg poachers plastic thingy. Crack eggs into it. Pierce the yolks. Experiment to figure out long you should let it cook and sit for it to cook to desired doneness.

my eggs stuck like crazy and were AWFUL to peel until I stopped doing all that shit
then it was EASY

- start the eggs in cold water
- bring to a boil
- let set for 15 minutes
- pour out hot water
- add cold water from tap
- peel eggs

THEY WILL BE FUCKING EASY TO PEEL
