Homemade chicken noodle soup I whipped up last night. Used purple, yellow, orange carrots in mirepoix, resulting in purple broth. Mellowed out a bit after addition of chicken stock, but not unappealing.
This is cold out of the fridge, so there's congealed chicken fat on top currently. Kind of a lot, seared bone in chicken thighs, then boiled them in the broth for like half an hour. Good shit.

Tomato, Zucchini & Squash Ratatouille with Pan-Seared Salmon

This is one of the best meals I've never made, and was my first time cooking with squash and zucchini. I've smoked salmon before, but never done it in a pan.

https://www.seriouseats.com/recipes/2017/01/crispy-pan-seared-salmon-fillets-recipe.html

Used all fresh tomato, zucchini, and squash from the garden. I included the tomatoes diced, and separately immersion blended and cooked down with the herbs simmering in the tomato sauce. Removed the herbs when the flavor was significantly over-concentrated in the tomato sauce, and continued to let the sauce cook down while doing all the other steps. Saute and season the veggies separately, and combine into a large pot / pan as you finish them, or use separate pans to avoid overcrowding still finish faster. Briefly cook the diced tomatoes in the pan last, using their acidity to help deglaze, and then pour them and the cooked-down tomato sauce into the combined pan, stir together and simmer on low.

After you have the ratatouille simmering, take your salted, peppered, and patted dry salmon and place skin-down, laying away from you to avoid getting splattered. Cook on medium-low until desired internal temp is reached, briefly sear the top of the salmon, plate, and finish the salmon with fresh squeezed lemon, capers, etc.
