Dude, potato skins are fucking great. I've made nachos using roasted potato skins. Basically slice the potato so you get a nice long skin but with some potato attached. Par boil em, roast em with a bunch of cayenne pepper over them until done, then cover with cheese and sliced bacon, stick it back in a low oven until the cheese melts then dump guac, sour cream and refriend beans over them.
It's fucking delicious.
