when they say mediterranean they usually refer to the style of cooking that tries to keep the distinct individual flavours of ingredients isolated and separate as much as possible without merging flavours together, the idea is to taste an array of ingredients as opposed to a homogenized 'dish' typical in french cuisine in which usually only subtleties on the ingredients used can be drawn out. That is why recipes with onions in french cuisine, the onion is never outright present and blends into the dish, but in a mediterranean recipe the onion will stand out and can be tasted individually if picked out.
