I think the issue is more about the given organism's apparent capacity for suffering. Plants don't seem to have even the most basic sorts of biological machinery that we believe are involved in pain and suffering. Closest thing to a more animal-like plant would probably be a venus flytrap, and even they don't have nervous systems of any sort and probably move in response to fluid pressure.
That's the reason behind calling brain-dead people like Terry Schiavo "vegetables." The idea is that they aren't really feeling pain or suffering or having an awareness of themselves or the world around them anymore, in much the same way vegetables don't seem to have that sort of awareness.
It's a little more complicated than all that because plants clearly do "behave" in a long term sense in response to stimuli light sunlight or water, but it's generally not thought of as even the same level of awareness that a simple insect would have in comparison, let alone a doggo.

I don't think they really care about getting the taste exactly right. It sounds more like they're doing it for the novelty of taking a dish that's offended a lot of vegetarian / animal rights type people and doing a vegan simulation of it. I would guess it probably tastes very little like the real thing except that they have some very basic ideas of how the texture would be and they also have the non-animal flavors still like Armagnac.
It's not like any non-vegans are going to be eating this anyway.

Reminds me of part of the folly of the same type of retards trying to eliminate fossil fuels. They seem to only talk about stuff like cars, but neglect the massive influence organic chemistry has had on our society, and the influence it has on almost every product we produce as a species at this point.

In eliminating fossil fuels and therefore plastics etc, it would be very difficult to simply walk civilization back to something like a medieval state. See the gold industry for example; the 'low-hanging fruit' deposits have practically all been depleted, so now we have no choice but to extract ores of extremely low concentration that require high tech. Thus, I honestly think it would be realistic to suggest that such a transition would require us to walk global civilization back to something like the Stone Age.

Now combine the desire to eliminate fossil fuels with veganism. Veganism is heavily reliant on industrial agriculture, requiring intensive fertilizers, pesticides, and hydrocarbon-powered farm equipment. It's hard to imagine how a vegan would fare in a Stone Age environment. As you pointed out, animal agriculture and hunting provides substantial returns beyond just meat such as pelts and bone tools. Not to mention that a fresh kill offers significant caloric benefits, especially in winter time when plants don't really grow.

In short, I imagine the only way the dream of eliminating carbon fuels and becoming vegan could effectively only be brought about by a total and global collapse of civilization, and a devolution towards our earlier primate ancestors like gorillas or even little monkeys.
