Because the whole point of a restaurant is to entertain guests. As a diner it is expected that a restaurant would want my business, and it's no big deal to get it. 4chan loves to talk about Jiro but honestly the situation is no different at any high-end restaurant. I have made months-in-advance reservations to many places all over the world.

I tried eating there one time. The food was good but by the time I got to the third piece my hand slipped and it separated the fish from the rice. The music stopped playing and Jiro looked pissed, apparently this was a grievous faux pas, He took the knife pointing it directly at me saying "white piggu get out", then drew back to throw the knife. I got out as fast as I could and have been banned for life. I never even got my 500 dollars back.
