Give me some hearty recipes with lots of vegetables and fiber. Doesn't need to be vegetarian.
I need more in my diet but I hate making sides and usually prepare something meat heavy.
Chana masala with naan is pretty good and sticks to the ribs.

Mac and cheese would be decent if you use whole wheat pasta and add some steamed broccoli to the mix. I also usually add more cheese than what most recipes recommend to make it heartier. If you've never had whole wheat pasta before though, try it separately because it doesn't cook the same way and some brands can be gritty.

Don't make recipe with more fibers, or better do then but you better change eating habits.
Cooking vegetables destroy fibers, so if you want to maximize your fiber intake just eat salads.

Get some fibers from fruits, especially the one you can eat the peel: apple, peach, grape, orange etc.
Buy whole wheat product.
Eat raw veggies and cabbage whenever you feel like.

Also don't eat exclusively raw vegetables, some of them when cooked make some nutrients more bio-avaible: ie lycopene in tomatoes or beta carotene in carrots
