Tacos I made for dinner tonight.
Leg of lamb that marinated overnight in some spice paste I put together. Roasted in the oven since it was too rainy to deal with the smoker today.
Put some lemon/mint/tahini yogurt sauce on it with pickled red onion and radish and some more mint and cilantro on top.
Also some kale and barley salad with sundried tomato, toasted pine nuts and citrus vinaigrette.
It was pretty decent, kind of wish I had picked up some pita instead of the tortillas though.

-lime zest
-citric acid
-turmeric

fennel just to make it a lil less earthy. dried dill just to pull the dill flavor back through. opted for zest + acid instead of lime juice because i was worried about thickness. ended up tightening with xanthan. turmeric for color

rest of the plate is squash blossoms, baby yellow squash, radish, dill flowers. gm brought in the dill flowers from a local garden and we had squash blossoms to use up so i just rolled with that.

The idea was to offer condiment choices. The black ants orange dots (black garlic and apricot emulsions) could be eaten on the blistered peppers separately or in combination with the wasabi cream (large green dots). The togarashi painted plate was mostly decorative though the peppers were dusted with it.

I've worked in fine dining in restaurants such as OPs. Its deconstructive style is dying out in favor for sustainable elevated street food. And I can't blame the trend; when your entree is nothing but sauce/puree your restaurant is fucked.

OP if you want to have a discussion with cooks such as ourselves from fine dining, you're not going to get it by posting your restaurant's portfolio. We are more interested in what techniques went into each dish, the inspirations, the difficulties, i.e the reality of the food that the picture doesn't show. Anyone can plate, tell us about how the dishes made you feel. There's cooking sections on reddit and trust me, no one is interested in your amuse buches because at the end of the day, you're not offering anything someone familiar with Alinea hasn't already seen. Us kitchen workers talk about the kitchen itself.

Yes. Everything is part of the dish, flavors and textures are considered part of the whole. In the instance of the orchid on the salad, the dressing is actually a vinaigrette made from those same orchids and strawberries. As for the dusting on the second plate, it's actually kinda painted on so it doesn't come up easily but the togarashi itself (which is what it's dusted with) is also on the peppers already. The small drops are two different flavored emulsions that are there to mix with the wasabi cream and add the option of a variety of flavors.
