Just eat em, I think they taste way better than apples. They have a more potato texture but they have this subtle woody sweetness to them, not too juicy, not too sweet.

Apple butter, jam, jelly, pie, cobbler, I dice em up small and use em in salsa. Spice em and bake em. Sauce em and use em in cake. A rough grind sauce with a touch of allspice for a glaze over chicken. Core em put a plug of butter in em hit with a bit of cinnamon bake with pork. Use your imagination.
