The Amazing Race - /ck/ Edition

Alright, it's time to get away from the fast food threads and back in the kitchen, /ck/. Time to do some actual cooking.

I haven't seen an Amazing Race thread in a very long time, but I've been on and off the site for a while, so apologies if I've missed it. But, to the point, it's time for another Amazing Race.

The rules are simple:

1. Generate a random country from the provided link.

2. Research traditional food items from that country.

3. Make one of those traditional dishes to the best of your ability.

4. Post the results to /ck/, either making a thread and linking it back to this one, or posting directly in this thread. You can make a cook a long if you want, but you must put up a recipe of what you have cooked.

If some cooking ingredients aren't available to you in your region, that's fine. The more accurate, the better, but as long as you do your best that's okay.

Prize is bragging rights and congratulations.

I'll be going for Tokelau, which is a dependent of New Zealand. Last time I had a European country, so this will be interesting.

Last time I did this I rolled Guyana and decided to make a metemgee - pic related - and then I threw out my back and had to lay flat for four days and had a lot of pain for weeks after and then never got around to making it.

You do realize that no one here's impressed by what you're doing, right? /ck/ is older than a significant amount of this website, and you're not earning brownie points by being... Whatever you're trying to be.

I'll be making either snapper or shrimp with some kind of coconut something. Along with banana and sweet potato mash, and some kind of a papaya topping. Tokelau doesn't really have any 'dishes', at least none that I can find, they just have a diet of certain foods. Fortunately, most of those foods go together well.
