The problem is that b12 is absorbed in the GI tract BEFORE the colon, so the B12 that your own bacteria produce cannot be absorbed.

Because the plant-based versions aren't quite as satisfying. Plant protein isn't as good as animal protein, it's missing nutrients like heme iron, they usually have less fat which also makes it less satisfying, etc. I think plant burgers are okay, but I still have to add cheese to them, and they aren't a substitute for a real burger so I treat them as their own thing.

Sweet potato “Ropa vieja”
It’s my favourite meal prep recipe and very heart and comfy on cold days. It’s from the easy vegan cookbook hence the weird measurements

.75 cup chopped onion
4 cloves minced garlic
.75 cup chopped bell pepper
4 cups peeled and shredded sweet potato (about 2 sweet potatoes)(use a julienne shredder or food processor if you have the attachment)
1-28oz can of crushed tomatoes
1 cup low sodium veggie broth
1 tbsp apple cider vinegar
2 bay leaves
1.5 tsp cumin
1.5 tsp salt
1 tsp thyme
.5 tsp black pepper

1) Heat water or veggie broth over medium-high heat until steaming. Add onion and sauté until translucent. Then add garlic and bell pepper and sauté for about 3 minutes.

2) Add the rest of the ingredients, turn head down to medium-low, cover and cook for 15-20 minutes or until sweet potato is soft enough to eat.

I’m pretty sure corn is in season so creamed corn.

2 lbs. frozen sweet corn (32-oz. bag or 2 16-oz. bags)
1 1/2 cups unsweetened almond milk or plant-milk of choice
1/2 medium-sized onion, chopped
3 Tbsp. maple syrup
2 tbsp. ground flax seed
1 tbsp. minced garlic
salt, adjust to taste
black pepper, adjust to taste

Instructions

Preheat a nonstick skillet over medium high heat and sautee onions and garlic until the onions are soft.
Add a couple tablespoons of water to pan in order to prevent sticking if needed.
Reduce heat to medium, add corn, and cook for 8-10 minutes. You want to make sure the corn is completely thawed and hot.
Add the almond milk, remaining seasonings and stir gently to combine.
Let cook for 5-6 minutes after stirring.
Depending on how thick you want it, transfer 1/3 to 1/2 of the corn mixture in the skillet to your food processor or blender and blend until fairly smooth. Pour this mixture back into the skillet with the whole corn kernels and heat for a few minutes.
Remove from heat and serve.

Cut the dough into biscuits using a biscuit cutter, a large cookie cutter (if you want fancy shapes), or a wide rimmed glass.

In a mixing bowl, mix together wheat gluten, nutritional yeast, onion powder and poultry seasoning.
In a larger bowl, combine Franks and tahini and whisk until smooth.
Mix the dry ingredients with the wet and stir until well combined.
Knead the dough until it is elastic but not dry. Sprinkle some additional gluten flour if you find you have made your dough too sticky.
Divide the dough into chicken size pieces. Keep in mind they will grow to about twice their size, so make them a bit smaller than a normal chicken breast.
Place the nuggets in a pot filled with boiling broth, ensure they are totally covered.
Cook nuggets in broth for 1 hour at a low boil, stirring every 15 mins.
Remove from broth and place on a wire baking rack to dry.

>Coating
Combine the hot sauce, egg replacer and mustard in a small bowl.
Combine the flour and all spices in another shallow bowl, and whisk until well combined.
Working with one piece of seitan at a time, coat each piece with the flour, then dredge it in the hot sauce mixture, and coat again in the flour mixture.
Set aside until the rest of the seitan is breaded.
Heat up plenty of oil in a skillet, or heat up your deep fryer. When hot (350 degrees) fry the filets for 8-12 minutes or until they are light brown and crispy.
Remove the seitan and place on paper towels to drain

1 tablespoon olive oil
1 small onion, chopped

Heat oil in a large saucepan over medium-high. Add onion and cook until soft, about 3 minutes. Add garlic and cook for 60 seconds stirring. Stir in potatoes, paprika, Bragg liquids aminos and vegetable broth.
Bring to boil, cover saucepan and reduce to simmer and allow to cook for 10 minutes.
Add green beans and cook for 15 more minutes or until tender. Stir in butter.
Season with salt and pepper and enjoy!

The other recipe is how my Mississippi-an mother would make them but instead of bacon I use mushrooms these days.

Oil

Mushrooms
White distilled vinegar
Lots of black pepper

Sauté the mushrooms until all the liquid is cooked and they start to carmelize a little
Deglaze with summer vinegar
Throw in the green beans, toss and cover
Add a bunch of black pepper

Rinse and dry the chickpeas with a paper cloth. Mix with maple syrup, oil, salt pepper and spices. Put the sweet potato on a tray, cut side up. Put it in the oven at 200 °C. After 10 minutes put the chickpeas on the tray with sweet potatoes and cook for another 20 minutes. Meanwhile in a bowl mix vegan yoghurt ( greek yoghurt if you're vegetarian), tahini, freshly minced garlic, parsley, salt and pepper. When the sweet potatoes and chickpeas are done, put the tahini yoghurt sauce over it.

Here is a sweet bun recipe. I saw a picture of a cinnamon bun that looked pretty good.


DOUGH
1 cup Unsweetened almond milk
3 Tbsp vegan butter
1 packet rapid-rise (instant) yeast (~ 2 1/4 tsp)
1 Tbsp sugar
1/4 tsp salt
2 1/2 - 3 cups unbleached all-purpose flour (I mixed all-purpose and whole-wheat pastry 2:1)

FILLING
1/4 cup vegan butter, melted
1/2 cup brown sugar OR granulated sugar
1/2 Tbsp cinnamon

GLAZE
1/2 cup brown sugar
1/2 cup vegan butter
1/2 cup pecans, chopped

Instructions

In a large sauce pan, heat the almond milk and 3 Tbsp butter until warm and melted.
Remove from heat and let cool to 110 degrees. It should be warm but not too hot or it will kill the yeast.

Transfer mixture to a large mixing bowl and sprinkle on yeast. Let activate for 10 minutes, then add 1 Tbsp sugar and the salt and stir.

Next add in flour 1/2 cup at a time, stirring as you go. The dough will be sticky. When it is too thick to stir, transfer to a lightly floured surface and knead for a minute or so until it forms a loose ball, adding more flour as you go and as it will absorb.

Rinse your mixing bowl out, coat with oil and add your dough ball back in. Roll around to coat. Cover with plastic wrap and set in a warm place to rise for about 1 hour/doubled in size.

prepare glaze by mixing butter and brown sugar and spreading it in an even layer on the bottom of an baking dish. Top with pecans and set aside.

Roll out the dough into a rectangle on lightly floured surface. Brush with 1/4 cup melted vegan butter and top with 1/2 cup brown sugar and 1/2 - 1Tbsp cinnamon.
Starting at one end, tightly roll up the dough seam side down. Thencut the dough into 1.5 - 2 inch sections and position in your dish with the glaze layer on the bottom. Cover with plastic wrap and set on top of the oven to let it briefly rise again. preheat oven to 350 degrees.

The slaughtering process isn't painless but compared to 2000 years ago when cows throats would be slit or 10000 years ago where they would be stabbed to death by early humans it is much better.
