doesn't that seem a little short?

>> No.11018139

If you don't have a grill:
>Preheat oven to 500
>put medium sized pan in the oven while it preheats
>pat steaks dry, dab with a paper towel with some olive oil on it, generously salt both sides
>let sit out while pan and oven preheat
>once the oven is done, put the pan on the burner around high but not full force (8 if you've got a number gauge) and give it a minute to take to the heat
>Add a tablespoon of high heat oil to the pan and swish it around
>steaks go down on one side for one minute and press down with your tongs for 15 seconds
>Flip and let sit for 30 seconds on the other side, then into the oven
>2 minutes in, then flip, another 2 minutes
>let rest for 5 minutes before cutting into for medium rare. For more rare, do a minute each side.

On a grill:
>baste you steak with oil before hand, not over doing it but making sure it's enough to look somewhat glossy
>salt
>set one side of your grill to high heat and the other to medium
>Steaks go down on the high side for three minutes each side
>move to the medium side and let sit for another 5 minutes
>let rest for 7-8 minutes

That is local beef. Any longer and it gets further away. 30 seconds may be too long. watch it.

Light up the stove on high, place the pan and let it heat for 2 minutes.

Add a small amount of oil and the steak, sprinkle salt and pepper over it directly over the pan.

When it starts bleeding, flip it with a fork and add a bit more salt and pepper, cook for 1 minute and take it off.

Enjoy!

You're never going to get a good sear with that, and even if you do get it hot enough you'll likely ruin the pan.

>> No.11019200

>>11019194
Oh yeah, and let the steak get to room temperature before cooking, dont throw the chilled meat in the pan or it will not get a good sear.

>how about a minimalist, and time proven approach?

There is nothing minimalist or time proven about using an oven or a grill which will vary from person to person and cost a lot.

Sous vide is more minimalist than grilling/frying/oven will ever be, faggot. It's also far cheaper than any of those items.

Apologies for the tumblr, it's the only place I could see that has it. Use your broiler if you don't have a grill.

However, Squirrely Dan is right: Montreal Steak Spice really should be part of the conversation.
