Salsiccia literally means sausage, my dude. There’s more than one kind of italian sausage. That being said, the cured Italian sausages with lots of fennel, pepper, and garlic from around Molise are by far the best, especially when suspended in good olive oil for a long time (salsicce sott’olio)
