That depends complete on the recipe. Chorizo vary enormously from recipe to recipe.

I do enjoy chorizo as well, I use it instead of any other susage when I make pizza, and I also enjoy merguez.

Salsiccia literally means sausage, my dude. There’s more than one kind of italian sausage. That being said, the cured Italian sausages with lots of fennel, pepper, and garlic from around Molise are by far the best, especially when suspended in good olive oil for a long time (salsicce sott’olio)

I protest German sausages as worst wurst. That distinction should go to salmon sausages.

All vegetarian sausages are equally tied at the bottom for worst sausage ever conceived. Surely they are a plot of the devil's in order to torture humanity in hell on earth. Honourable mention goes to any emulsified sausage, like hot dogs and the like, made with beef. Sure, there'll be variations but still a base where it fits the type. For example, I make andouille with the basics of garlic, thyme and cayenne, but I'll up the cayenne and add some sage, paprika and a touch of nutmeg to give it my own twist.
