I am a great fan of induction because it is so fucking fast and efficient but I admit the pulsed power regulation at low and very low settings for a low simmer suck. AFAIK the really expensive industrial models dont have that isse, but they are like three times as big as normal household tops and several more times as expensive.

In my country (Norway), nobody has gas stoves, everybody uses electric, but I did temporarily live in a bedsit where the shared kitchen bizarrely used gas, and I loved it. Much faster response than electric and just great. However, in 2018, with induction, I really don't see any advantage to gas. The only thing induction cannot do well is wok, because there is no heat climbing up the edges of the pan. Otherwise, what's not to love? Enormous power, instant reaction, no heat retention...

I regret not getting gas. I moved into a new house, the old pipes were capped and I would have had some extra work to do to hook us a gas stove. I got a really good deal on a stove with a flat electric cooktop. its fukkin trash. It doesnt even get hot enough to deep fry in a pot of oil, ive come to find out. it gets red hot for a few seconds then basically turns off. the fuck? even a coil cooktop is way better than this. the top also scratches easily and was damaged the first time I used it. Im gonna sell it at some point and get a gas stove. this is a nightmare.

I induction works about as good as gas but the big difference is that you can't lift the pan. Also scratching the induction stove surface is an issue so you can't fuck around with the pan as you want which i find limiting.
Still the best option if there is no piping in your house. Those propane bottles suck.

Agreed in general, but those two points are bass-ackwards. Generally speaking electricity costs about 3x what gas does for the same amount of energy. And gas stoves have far fewer parts in them making them much more reliable. Ignition goes out? Use a match. Power goes out? It still works. Etc.

The downside is that your cookware has to be induction-compatible. If a magnet sticks to the bottom of a pan, you can use it on induction stove. It it doesn't, you can't -- it just won't heat.

Induction stove also requires the pan have completely flat bottom, just like regular electric stoves. Induction/electric can't work around slightly warped bottom surface like gas flames can.

This is true, yeah. In the long run you will save money for energy usage. I still think gas stoves are a pain to clean though, and in terms of reliability you're right about power cuts. That said, with every gas stove I've owned they've always required the most maintenance. Especially with the burners not lighting. But perhaps I was just unlucky.

Another thing also to consider is the fact it's much more comfortable to leave an electric stove unwatched. Whereas with gas, especially when boiling water or cooking pasta, you run the risk of the water boiling over and extinguishing the flame.
