Cryptocurrency isn't just set at some value by a government, it has actual value based in energy and computing power. It now costs so much money to mine for bitcoins that you need a heavy duty industrial server to make it work. And it gets more difficult to mine as time goes by, preventing inflation.

Use gold as an analogy. Gold prices fluctuate as would any currency value backed by gold. That doesn't invalidate gold backing. You can still redeem the currency a set amount of gold.
Same thing with something like bitcoin. Regardless of what others speculate on it the backing of energy and computing power is independent of that. It has a concrete value in that you can do a deterministic amount of work to gain one bitcoin, and that work is a separate relationship from its market value in terms of other currencies.
