I read some article saying milk weighs down the eggs. Water keeps them lighter and fluffier. I don't know if it's true nor do I care as I've never been able to tell any significant difference between milk/water/neither. The only time I've noticed a difference is with Ramsay style eggs or when I just crack them right into the pan and scramble them as they cook.

I never add milk. Rarely I'll add cream or even a dollop of yogurt.

But on the subject of scrambled eggs, recently I purchased a nonstick-safe silicon whisk and tried making eggs with that instead of my usual spatula. They came out looking almost like spongecake and had a fluffy texture.
