So I have always liked cheese but just recently discovered real aged cheese. So far I am really partial to 1yr white cheddar from Vermont. I prefer hard over soft.

What are some good cheeses to check out? Would prefer to stay under 20$ a pound.

In all honesty you’re probably going to have to go ahead if you want decent cheese.
Not sure what the milk situation in Canada is regarding pasteurization?
Might be worth looking into.

Go ahead like more than 20 per pound? Well if it's as eye opening as my last 2 months with actual good cheese was then I will try. In USA it's all pasteurized.

Try the Cypress Grove Lamb Chopper from whole foods. It's a favorite of mine. If you really like cheese, you should look into making your own.
