I want to make my own tortillas, but there are a huge number of recipe variations. Some say to use lard, some say to use clarified butter, some use olive oil...

For those of you who make homemade tortillas on /ck/, what recipe do you use?

This recipe worked out fine for me. Rolling them into nice circles is another matter. Mine always end up like pic related.

For corn, it doesn't matter as much, and I'd recommend corn oil if you can't do lard. But, if you are a foodie and know a bit about flavor profiles, flour tortillas definitely does needs to be lard or shortening, or they end up changing flavor and texture being something indian flatbread or other pastries.

Like other whole wheat bread products, whole wheat is not as easy,and requires a lot of trial and error but it's certainly cheap to try. Whole wheat breads are kind of a fake healthy thing with only a portion of whole wheat flour used in order to get the right textures, rise, tenderness, etc. Only worse to try at home is diet food or light items. I don't have a recipe, sorry. I wouldn't attempt flour though I've made chapti, kulcha, pita and roti successfully. Homemade tortillas need a little panfry step, and I like to rub oil between two uncooked tortillas in my palms, to spread it very thinly. Tortillas are easy and don't need special equipment though the presses are indeed nice and quite cheap, just line them with good plastic wrap.I like to cut open a freezer ziploc for their durability. You can rest dough as much as overnight to develop flavors. Use an ordinary cast iron instead of a comal or griddle.

I've used this substituting lard for the shortening and they're very good but the fag that cooked them was probably "eww, a charred spot would immediately give me cancer" so they fucked that up. You definitely want small patches of charring. Like another anon said, it's a bitch to get a perfect circle manually, but that's just aesthetics, fuck it.

Corn tortillas are much simpler just 1 1/2 cups hot water to 2 cups masa and I have a press that is the size for tacos so I only use flour for burritos. Corn has better flavor, too.
