Some version of 2 servings carbs, 2-3 servings beans or mock meat, 3-4 servings of vegetables for dinner (like creole-style beans, brown rice, and a huge kale salad with tahini.)
Also supplementing B12, using iodized salt, vegan D3, and vegan DHA, plus a multi-vitamin so no worries about micronutrients.

Made a pot of "Red" Soup this week:
- 1 28oz. Can Whole Tomatoes + Filled Can of Water to Rinse w/1 tsp vegetable stock paste
- 1 Large Red Onion
- 1 Large Red Bell Pepper
- 2 Medium Carrots
- 1 Large Stalk Celery
- 1 Stalk Green Onion
- 1 Serrano Pepper for Heat
- 4/5 Cloves of Garlic or to taste
- 1 Handful of fresh Basil
- 1 Handful of fresh Oregano
- 4-5 Dashes of Balsamic Vinegar
- A giant couple of spoonfuls of Sweet Paprika
- Salt/Pepper to taste

Bring everything to a boil and let simmer for 10 minutes then ladle into blender and puree until smooth. Serve with chopped fresh summer tomatoes and saltine crackers on the side. Could probably roast the veggies first but I made this was a no oil recipe.

A number of reasons:

crops used for cattle are crops that are not edible for humans, mainly due to cellulose content and our inability to digest it, in addition cattle is increasingly fed with waste products from agriculture for human consumption, the parts of plants we can not eat.

Hay is a good example of something cattle can eat which we can not, it also grows in abundance and doesn't need good soil and weather conditions, it's not too picky.

The same applies to corn and other feedstock which is grown above a certain latitude (due to solar intensity). Corn grown above a certain latitude is not palatable for humans yet it grows very well in almost all conditions and soils.

You can not just grow any crop anywhere.

A lot of the land is not suitable for crops we humans can digest. Meanwhile hay and other crops for animal feed do not require fertile land, perfect water conditions etc, they are abundant and not using them would be wasteful and unsustainable.

You need cattle to break down that biological stuff into plant feed so the cycle continues.

Oversimplified to the point of not being realistic. Cattle is essential to eat waste and cellulose which we can not eat, you can not just get rid of all cattle crops and replace it with crops for humans, you need to consider a lot of factors, soil fertility, water regime, solar intensity etc etc.
