why do my cupcakes end up like this inside? ive done 5 single test attempts now but they never bake inside, i reduced the heat to 170 degrees even and let it have more time in the oven

why wont they bake inside?

Picture looks dense. My guess is your measurements are off. Get a recipe that goes by weight and see if it still happens.

i did a bread some months ago, it was a bit the same but far from as bad as this, and it just mystifies me more cus the bread was huge, the cupcakes are small so heat should penetrate way easier
and the bread while not perfect was definitely delicious and edible, not this doughy garbage i got today

hmm. when you add the flour, do you gently mix until just incorporated? Over mixing once the flour is added, messes with the gluten, and causes a tough rubbery texture.

You may be using too much flour, they look super dense. Are you spooning your flour into the measuring cups and then leveling off or scooping the flour out with the cup itself?
