Hello,I have some andouille sausage. I have never cooked with it before so I was wondering what you guys would make if you had some andouille sausage.

I would saute medallions of andouille sausage with some onions and green peppers and eat it.
If I wanted to do more work, I would make a beans and rice dish, with onion, pepper, mushrooms, okra, beans, rice, tomato.

These, or even just some red beans and rice. If you wanted something less-intensive, they make a great sandwich. Split them lengthwise and fry in a pan, then place on a hoagie roll and top with some mozzarella or jack cheese. Put them in a 375 degree oven until the bread is toasted and the cheese is melty. Pull it out, add dill pickle and some mustard, and you're good to go.

It's just a smoked sausage typically spiced with garlic, thyme and cayenne so use it for any recipe calling for smoked sausage. Traditionally andouille is stuffed into a larger diameter beef middle which is too large to eat in a bun and that's why it's usually used as a flavoring.

I had some sausage last night for dinner, so here's an idea:

>sautee some onions, garlic and mushrooms in olive oil, set aside
>cook your andouille in some olive oil on medium/medium high heat
>put a slice of cheese on it, cover until cheese melts
>uncover, in the same pan, add a hot dog/hoagie bun to toast, throw the onion, garlic, mushrooms back in to get hot
>take bun out when it's toasted, put the onion mushroom shit in, then put your cheesy sausage on top and slam some home made saurekraut on top with some mustard

Bam, gourmet hipster hot dog! So fucking good.
