10971198 No.10971198 [Reply] [Original]

Why the fuck do Koreans eat this shit alone as a side dish? I'm pretty open-minded with food and was raised in a family that at a lot of different stuff and yet every time I've tried Kimchi straight, it has a tang like someone threw in a rotten vegetable from some other planet.
Fuck.
You'd think it would have a tomato taste to it or something, but instead the appearance together with the taste makes me wonder if they don't grow these things off plants in Hell and the red sauce or whatever are the last remnant bloodtears of a mortal's humanity crying out in pain.

Kim chi is delicious and healthy.
>you'd think it would have a tomato taste
Hurr durr, its red so it tastes like tomatoes.
Fucking giga-tastelet thread.

Its cabbage thats been fermented and coated with chili pepper. It tastes like exactly that, sour and spicy cabbage.

How are people this dumb and uncultured?

It's literally fermented, that's what fermentation is.
A lot of people like that flavor, but it's obviously strong and potentially off-putting if you aren't looking for that.

Because Koreans were until very recently, poor. Their entire cuisine is based on boiled one-pot stews that consist of fermented vegetables, chili paste, and tofu; some of the cheapest ingredients that never go bad.

The heavy spices have the added benefit of masking the taste whatever rotten meat they include. If you want good East Asian food eat some Japanese or some Manchurian cuisine.

Sure, if you want to eat nothing but grain for the whole of winter and suffer from various micronutrient deficiencies. People would generally take advantage of every method of preservation available to them - salting, smoking, curing, fermenting, potting, and so on. People wouldn't just live on pickled cabbage, it would make up one part of a diet that featured other preserved foods. Cheese is a way of preserving milk through bacterial action, for instance, and dried meat could also be lacto-fermented.

>Because Koreans were until very recently, poor.

This is a meme perpetuated by the military junta that ruled S. Korea from 1961 to 1987 to justify the dictatorship (we're rescuing you from 5,000 years of poverty). The fact is that travelogues written by Chinese scholars (archived in China) from 16th to 17th century consistently remark that Korean peasants are lazy as fuck because food is abundant. Period recipes, especially the ones from Seoul, use tons of beef.

The persistent poverty period started in the 19th century with the sudden population increase caused by introduction of potatoes from Europe (Europe also experienced explosive population growth due to extremely calorie efficiency of potato farming versus traditional grains). The decline of Chosun dynasty that ruled Korea followed by 1910 annexation by Japan and 1950-1953 Korean War capped off the ultra-poverty period.

People have been eating various pickles for a long time. Not only are they nutritious, but they're a way to preserve vegetables when you don't have a fridge. They're also how you keep from getting scurvy during the winter when fresh food was traditionally unavailable - pickled cabbage is a good source of vitamin C, which is why it exists in so many cultures where winter made fresh veggies impossible.

But kinchi serves another role in Korean cuisine. It adds an acid component to meals that might otherwise be lacking it. Similar role wine plays in southern Europe, and vinegar or lemon juice play in Mediterranean cuisine.

Korea has advanced a lot over the years in giant cities like Seoul (free good wifi on any street, lots of western influence and tech) much like Japan is. But it's still poor in a shitton of areas.

Korea has more "flyover" spots than America. And the flyover spots are much worse because it's basically just poor country bumpkins eating dogs and trying to live as cheaply as possible.

I was a liaison officer with the ROK Army and I can assure you there is a real macho drinking culture in Korea. When you're partying you are expected to keep up shot for shot with everyone else and if you're too much of a puss to do so you will be ridiculed, looked down on and ostrasized. These guys weren't teenagers either they were officers all the way up to Lt. Col.
