Yeah, beef stew isnt that hard to make. Just cook in low heat and long time cube cuts of cheap meat and veggies given in food banks, potatoes onions celery carrots. Add spices and when the soup becomes stock, thicken it with flour to make it a gravy. Your chicken looks dry and slightly overcooked. You should try dicing your chicken more consistently. I don't know how you cook your breast but I recommend searing and finishing in the oven. Ok then...2-3 fresh Carrots (medium sized), 3 red Onions, 3 Cellery (only the green, long thingies. Dont know how they are namend in english) and one Celleryroot.
Cut them all down to little cubic chunks. 3-4mm*3-4mm.
Some vegetable Oil in a high Pot, heat it up to "under medium heat and throw the Stuff in and simmer (slow cooking at low heat) it at low heat for 30-45 minutes.

After the Roots? and Onions are slightly browend, add 1-2 Garlic-Cloves. No need to chop them or so. Just crunch them and throw them with the peel into the pot. Higher the heat and give some Tomatopaste (3x concentrated) to it and caramelizise? it until it realy smells good and changes the colour again to dark blood red/browned.
That is, btw, what is called a Soffrito.

Add some Bayleafes. 2-3 of them, a bit Salt and Pepper.
Chop 2Kg of fresh Tomatos, 1 Kg of fresh Cherry-Tomatoes, 1Liter Passata and 1 great Can of chopped "San Marzano" Tomatos.
Throw them all in the great Pot and let it cook at medium-heat for about 4-5 hours. Stir often. Dont let it burn; we want to reduce right now the juice and intensivice the sour/sweet taste of the Consommé.

After the reducing, add some Thyme, some Rosemary, 1 leaf Sage. Fill it up with the amount of the liquid you loosed right now with sparkling water.
Heat it up until it boils and puere (make a fine soup of it?) it with some Blender. I prefer the Rod Blender?. Wand Blender? Whatever.
Taste it. Does it tasted blend? Not enough Salt,Sugar,Pepper...Vinegar? Good!

Now u need something i know as an "Passiertuch". It is a plain, not coloured Piece of Cloth used just to filter all unwanted Particles.
And a big, but fine webbed Strainer.
Lay the "Passiertuch" in 4-layers folded into the Strainer and fill it with the puerred soup.
Knot it extremly thight until u have a filled bowl of cloth without any obening. You dont want some selfmade Tomatepaste in the next Pot.

6.
Put the Strainer and your Clothbowl filled with amazingly fresh Tomatosomewhat over another Pot and put some weight on the Strainer+filled with soggy Tomatosaucepaste^^.

Wait until drained dry. If necessary,press.

Thats all to do for the first clearing of the Consomme?

And this is how your first clearence should look.
NOW spice it up with tome Salt,Pepper, Citron or Vinnegar (Raspberryvinnegar is damn good) and some Gin.
Let it cool down; better put it in the cooler over night.

Now you need 6 Eggwhites. Not so hard to get. Just cruch an raw eg and put the White´s into one bowl. I dont care what you do with the Yolk. Just dont wast them.

Now the hard and annoying work beginns...
After your Sud is cooled down, scramble softly the 6 Eggwhites and while you put the Pot on the stove again at low heat, you will and have to stir it. As long as the Soup is still cold, throw in the Eggwhites and then...stir. Heat it up realy slowly, but increase the heat continousely. When you see it beginns to boil, wait for 2 minutes until the Eggs have binded all particles from the soup like in my Picture.

Then filter all of it again throug a Passiertuch.
Voilá, ready is the Tomatoessence/Consommé.
If you realy should try this out, you wont be regret it. But as i said...hellofawork^^.

It's a traditional Finnish food called läskisoosi. Basically it's pork belly fried with onion and then simmered in water thickened with butter and flour beforehand for 30 minutes. Only seasonings are salt and white pepper. Served with boiled potatoes and pickles.

Cheap weeknight dinner. Tenderized chicken breasts coated in pesto, sliced roma tomatoes, topped with fresh mozzarella and popped in the oven for 40 minutes. Served over a plain bed of lettuce with the juice from the pan poured around the plate instead of salad dressing.

made "oh shit stuff is spoiling" stew, plus some mutton that kicked the whole "oh shit I should make stew" mindset off in the first place. It didn't come out like a professional product, but it's tasty and the most ambitious thing I've cooked in a while (not a /ck/ regular) and I'm happy with it.

-armenian brandy (used to deglaze after searing meat)

The stock was made from the mutton bones with some more mirepoix.

Made a quick ragout. Starts with browned sausage, onion, and garlic with salt and chili flakes. Add broccoli and the juice from canned beans and clams, then simmer until almost tender. Add beans and clams, bring to a boil, and it's done. Topped with fresh parmesan and a little drizzle of olive oil.
