Dry brining is good, you obviously don't keep that salt on it when you go to eat it though. I use less salt and do it overnight but when you use that much for a quicker brine you rinse it off. Nothing wrong with what he did for that.

I'm not advocating for a keto diet, but those things aren't as much of an issue as him being obese and probably consuming 2 or 3 times the recommended amount of sugar every day. The only thing that happens to me when I eat too much fatty food is I get a bit of diarrhea, but if I eat too much sugar I get skin rashes and sometimes it even makes my chest feel tight.

The sad thing is most people who are in this situation think like you do, and they stop eating fat, and then they never feel satiated because there's no fat in their diet, then they give up and go back to eating horribly because they think it's the only way to get healthy.
