I used to work produce that had one of these, we cleaned it daily at the end of the evening. During the day I'd occasionally empty the tray and wipe down the pulp. They're not that hard to clean, all the plastic shit unscrews easily and most of the metal as well.

Then again I'm pretty sure the more multicultural inner city stores don't bother with cleaning it as well and just wipe it down.

When I make guacamole/avo salsa, I just cut the avo into chunks. Big, rustic chunks, same as the onion, pepper, cilantro, and tomatoes if I'm using them. The lime juice and other acids in the salsa/guac will help break down the avo anyway, so by the end of the week it's in your fridge, it's more like a traditional mortar-and-pestle guac texture. Also, I like it chunky better.

I can understand this. I love raw onion, but it has to be finely minced or thinly sliced. The reason for this is that a chemical reaction takes place when the onion's cell walls are damaged that gives it that characteristic eye/mouth burning. When you mince or slice it as small and thinly as possible, you force this reaction to take place before it reaches your mouth, making the onion milder. I put a ton of raw onion in my salads and sandwiches but I don't like thick slices or chunks of it.
