tapatio, valentina, and vark are my faves
tapatio is my cure-all for fresh fruit, soups, fried food and snacks(on top of chips)
valentina's citrusy taste makes it a more refined choice but still goes on anything a tap of tapatio would do
vark doesn't have the vinegarlike finish but a second or third layer of flavor/spicyness which goes well on sandwiches, salads and other cooked meals.
i don't base things on how spicy the are,
as an aside, tabasco is the equivalent of vinegar for me; i use it as a seasoning in soups, for fish and chips and on top of a fried egg(the vinegar emulsifies the yolk giving it a creamier texture/taste)
