its easier since you don't have to count very carefully, or really at all. The small numbers you're dealing with make it easier to keep the carbs in line without having to obsess about it. All I ever do is make sure to keep carbs low by avoiding anything that doesn't have low-single-digit net carbs, and my ketones stay around 2.5+/--0.5 mmol/l. I have no firm count of how many carbs I consume in an average day; just thinking about it its probably around 20gm but I really don't know.
There are some autists out there who obsess about their macro balance with spreadsheets and macro calculators, but autists gonna aut. It's really not necessary for success, just cut carbs to the bone and up the fat, and for 99% of people the rest will follow.

That's just the newbies that are also worrying about getting into ketosis in the first place. Once you've been doing it a litle while (few months) you almost never think about it, because you quickly realise that you can get back into ketosis in hours. It's only that first time going into ketosis that's difficult, partly because your body just doesn't have the machinery to run in ketosis full-time so its a bumpy ride, and partly because you are still figuring out the rules. But after that you can go back and forth with ease.
I blew myself way the hell out of ketosis on my birthday - had a couple glasses of wine, a nice high-carb meal, followed by a glass of tawny port and a bigassed slice of bourbon pecan pie and an equally bigassed scoop of vanilla ice cream. Total meal was probably 200+gm carbs. I was back in ketosis in just over a day with BHB levels of 0.6mmol/L, rising to 1.5mmol/L about 18 hrs later. No keto flu, no worries, no fuss, just a minor hungry patch at the transition point, after which I just slid right back into ketosis.

A water fast should send your body into ketosis within 24-48 hrs; if you're t2 with a morbidly fatty liver then it may take a week or two. Most non-diabetics eating a standard american high-carb diet will nonetheless go into mild ketosis at night; the keto diet simply keeps them there and makes sure that they go into deep ketosis.

Nah it doesn't work that way with keto. When you come out of keto you don't crave food the way you do when coming out of a calorie restricted diet. You gain back your water weight but that's it. It varies wildly. When you're just starting out it doesn't take much. After a few months you can occasionally abuse carbs without issue. I once had 3 donuts in 15 minutes as an experiment shortly after I got my blood ketone meter and I was interested in precisely this question. Blood sugar levels shot up to 157, came back down below 100 in a few hours, and as far as I could tell I never left ketosis. Ketone levels dropped from 3.5 to 2.0, then came back up to 3.0 within a few hours. I did it again the next day, my blood sugar levels only went to 135, but I exited ketosis for about 18 hours.

now you eat a whole jar of mayo, you won't be hungry for another 9 hours or something. you can eat as much as you want of whatever you want, eat sticks of butter and cheese if you want, it doesn't make a difference because you won't be over eating because the only time you will be eating again is when your body is telling you it needs more calories, depending on how much you eat will depend on how long that is, whereas with carbs they make you hungry so quickly that you end up eating too much too often. carbs + fat creates obesity, carbs create the addiction and cravings and fat adds the calories. fat by itself however is devoid of addiction and cravings, so you only eat when you need and not for the sake of it.

Sauces
I like to make my own sauces for vegetables.
Usually, simple roux based sauces, which is easy and quick. But there's the issue with the flour, so I need something else as a base.

I'm from Louisiana, so roux were a staple.
I use cream cheese + a tbsp of bacon grease for thickening now. The cream cheese thickens well, and the bacon grease compensates for the loss of toasty flavor and roux oil. For etouffee I also add a dash of paprika for color, and the hint of smokiness works really well.

Whoops, my bad. I thought you were trying to avoid gluten, not carbs in general.

The solution is still easy though. Instead of making a roux, use good homemade stock and reduce. You will get thickening from the gelatin in the stock.

The only thickener I use on keto is xanthan gum, because it takes so little to thicken even a big pot. Also I think its protein based not carb based. Cream cheese works very well too if you allow yourself to have dairy products, for some people even a little dairy kicks them out of ketosis.
