Using rough estimates, the beer will be10 degrees higher than the chicken. If the beer starts to really steam, chicken is already way over cooked

Simple test is to do a beer can chicken and cook chicken to 165 and measure liquid lost from can...it will only be a few millileters

You can get aromas from herbs and spices at temperatures far below boiling.

I've made a ton of beer can chickens over the years. IMHO, the best filling for the can is either white wine, lemon, and herbs, or dark cola (coke, dr. pepper, root beer, etc.) Beer is indistinguishable from water unless you use some kind of octuple-hopped coffee-infused chemical-laden memebeer, in which case the memebeer version tastes like ass. you get far more flavor from the aromatics you stick in the can than you do from the can liquid itself. higher ABV is nice because the alcohol evaporates at a much lower temp than water.
