This. If I'm having a filet you bet I'm getting it Rare/Blue, but if it's a Ribeye it needs to be Medium Rare. More fatty steaks need to be more cooked, but I'd certainly say that Medium Rare is the limit.

I will admit. I would never order well done in a restaurant. Most chefs just make it like any other steak so it will get overly dry. It's sad really. If you let the customer decide how they want their steak you should at least learn how to do them all properly instead of just anything between rare and medium.
