Hey guys bought a whole chicken today. Want to cook it in the oven while it's covered in spices and some dijon mustard/mayo/siracha sauce. Going for the Louisiana/Caribbean spiced chicken taste. Also,what temp and how much time should it be in there? Thanks in advance

55 minutes per kg of bird at 170°C in a preheated oven. So for a 1,2kg bird a little under 1h10min. Pretty safe rule of thumb for chicken and other birds. But ideally you use a meat thermometer, lower temps and then use the broiler in the last 15, 10 minutes.

Piri piri Chicken

2 tbsp McCormicks piri piri blend
3 tbsp Olive oil
1 tsp Herbes de Provence (thyme or Italian blend may work)
2 tbsp White wine vinegar
1 tsp Salt
4 Garlic Cloves minced/finely chopped

optional:

Liquid Macarico piri piri hot sauce to taste (approx. 2tsp)

mix well

Use Jacques Pepin recipe for application instructions and cooking.

cook it about an hour at 200 c for a largish bird, and baste it at least every 15 mins

Cover with Tinfoil for 50 minutes.
Remove tinfoil for last 30 minutes.
Rest for 10-15 minutes very minimum. Probably 20.
