Where do I get one? My local Chinese market doesn't carry vegetable cleavers, and I'm afraid to buy a random one from Amazon because seemingly all of them have reviews saying they're meat cleavers not vegetable cleavers and the blade is way too thick and heavy for chopping vegs.

A professional knife sharpener recommended Knifewear and Paul's Finest to me as maple syrup alternatives to CKTG. The former is for weeaboos but the latter has some chinese cleavers.

Also, with so many Chinese restaurants around and with the knife shape being popular enough with chefs of all stripes, you should be able to just pop in to any restaurant supply store and find a bunch of cleavers hung up in the knife section.

I bought a cheap one at Wholesale Club and I'm quite happy with it.

YOu coul also get any cleaver you want then send it to a professional knife sharpener or knife smith to have it thinned out on a belt sander. It's a bit of a hassle but the results are usually more than worth it. It will be better than any Chinese cleaver you can buy from the factory. Mercer makes a damn good Chinese cleaver it is razor sharp and has lasted me several years. Dexter makes a slightly inferior but cooler looking one. Dalstrong also makes them.
