I remember eating from this one taco food truck ran by white dudes. It was like...advertised as Chicago style or some shit with special beef. The tacos were four bucks each and were hard shells that came with jack shit for toppings. The ground beef was red, I assume because of sauce, but apparently not seasoned at all because it was the blandest fucking taco I had ever eaten. I've gotten way better tacos and far cheaper prices in nearly every other taco truck I ever ate at.

I’ve lived in Austin my whole life and I can say with certainty food trucks are not a meme. Some of the best food I’ve had came out of a mobile kitchen, I currently work in one myself. The reason why so many “hipster” ones have opened up is because property prices are so high in America good creative chefs are forced to rent a small block of land in a tiny kitchen. Ask any “trendy” mobile vendor and they’ll tell you they’d rather have a small restaurant with a full staf than a cramped box where everyone has to do every job. In fact when a food truck gets popular enough they the first thing they do is pivot to a permanent location.

Los Angeles resident here. Yes. An outstanding yes. I've never had food from a food truck in which I'd think was better than one from an restaurant. Food trucks are convenience for the working class if anything else. It just happens that Los Angeles has a huge working class community.

That said. PUSH CART or STALLS which only serve one dish do taste pretty great.

Depends on the country. In my country, food is expensive, a lot of taxes, and high wages for employees. That means any food truck run will cost you a minimum of $10, and as such it's only marketed to middle-class hipsters. The food is correspondingly artisanal, locally sourced, all that bullshit. I just want some cheap fucking tacos, man.

The industrial section near me has a small strip mall of commercial in it. Had some of the best subs and surprisingly excellent sushi. Two different business operating in the same slot. The sushi place ended up moving to the hipster little town near me, changing it's name, and going upscale. (It's pretty nice, but seeing a black lives matter sticker in the window of a small ass house that costs a fortune in the good part of town as possible far as from the black and hispanic ghettos as possible seems pretty laughable.)

Clarify please. Are you using dim sum to refer to potstickers/gyoza/dumplings specifically? Or do you meant the general term--a massive variety of small, different, dishes?

If the former, sounds great. If the latter, hell no. It's too complex to attempt in a truck--too many things to do, too much variety. Plus, the stand-in-line-and-order concept of a food truck doesn't really match with the experience of eating dim sum at a restaurant with multiple waiters and carts that come to you.

I've eaten a lot of great mexican food trucks. I think it works cause they have the meat and beans stewing all day, and then they just have to fry up the tortilla and assemble everything.
