For me, it's medium rare chicken.

My sister's the kind of person who likes her meat cut thin and cooked into jerky. Oh well. She gags if I eat medium rare stake around her.

Mom the same, but it's more reasonable since she was born into poverty with a dad who died in a work accident when she was 2, a cripple mother, and 5 other siblings. Nana basically almost never ate so her kids could have a bit more of whatever, but on the chance that she got her hands on meat it was of quality dubious enough to warrant cooking to absolute sterility. It was common for my oldest uncle to spend his weekend hunting pigeons in the fields with a slingshot, for serving alongside plain polenta, or fishing for eels in the fucking storm drains with what was basically a stick, some wire and a hook. Plentiful eels in there surprisingly, heard they were actually pretty tasty. Though again, you'd cook the shit out of it just to be safe.
