I used to do the whole ring up everything as bananas trick, by my local grocery store smartened up and now the self check out screeches "AVACADO, MANGO, STRAWBERRIES" whenever you put it in. so if I did it the way I used to the machine would just squeal BANANAS BANNANAS BANANANSANS

No what will actually happen is costs will stay the same and they'll pocket the difference. Then, if stealing resumes, they'll be forced to RAISE prices AGAIN to maintain the same profitability they had under no-theft. And should stealing cease again? Prices will remain fixed.
