I've take a detail from Good Eats and toss my potato cubes with some rice wine vinegar, red wine vinegar, anything handy (other than white distilled) along with a hit of any herbs I already have sitting out to put into the dressing. Give the potatoes some time to soak in some zesty goodness while they are warm and compliant.
