Dry heat vs wet heat
Baked goods generally like dry heat to seal in flavors
Roasts generally like wet heat to allows flavors to blend.

Not a huge deal if you're not an avid baker or making a ton of roasts or some shit.

Most heat sources are dry heat. Wet heat only happens if there is water present, either deliberately added to create steam, or from wet food. (i.e. a steamer, a bread oven with steam injection, or putting a tray of water inside an oven or smoker)

My parents had all viking appliances (range/dual ovens/fridge/dishwashers/etc) at their last house and I really wasn't that impressed. Didn't really like the design and they didn't seem like they were really worth the extra money. The appliances would be around 15 years old now so things might be different now though.

Now they have mid to high-end cuisinart appliances except for a sub-zero fridge which I like a lot better. Again it might just be because they're all brand new but they both look and work a lot better than the Viking stuff, at probably half of the cost.
